Aromatic duck in smoked paprika with sweet potatoes

INGREDIENTS:

- 1 whole duck

- 2 sour apples

- spoonful of smoked paprika

- spoonful of marjoram

- salt, pepper

- 2 large sweet potatoes

METHOD:

Clean the duck and rub it – inside and outside – with salt, pepper, smoked paprika, and marjoram. Cut the apples into pieces and place them inside the duck. Leave in a cool place for approx. 12 hours. Put the duck in a roasting tin and place the tin in the oven preheated to 180oC (gas mark 4) for approx. 2.5 hours – but after an hour make sure to reduce the temperature to 165 C (gas mark 3). While the duck is roasting, pour the melted fat over it 2-3 times. About 15 minutes before the end of the roasting time, add the sweet potatoes (salted and cut into wedges) to the tin. At the end, turni off the oven, and leave the meat to rest for another 20 minutes.
