Duck fillet with orange sauce

INGREDIENTS:

- 2 duck fillets

- 3 oranges

- 3 tangerines

- clarified butter for frying

- salt and pepper

METHOD:

Wash the fillets and make cuts in their skin. Rub them all with salt and a little pepper. Heat the butter in a frying pan and place the fillets – skin side down. Fry for about 5 minutes over a medium heat, then turn them over and fry for another 5 minutes. Put the meat to a heatproof dish and place it in a hot oven, and pour over with the melted sauce from time to time. Roast for approx. 10-15 minutes. Prepare the sauce: peel the oranges and tangerines, and remove the pips. Place the pieces of fruit in a saucepan, add a pinch of salt, and boil for a while. Combine the sauce made after roasting the meat with the orange sauce, rub through a sieve to obtain a creamy emulsion. Cut the duck breast into strips. Serve with rice, for instance. Pour the sauce over the whole dish.
