Duck marinated in wild garlic

INGREDIENTS:

- 1 whole frozen duck

- 2 tbsp dried wild garlic

- a few potatoes

- sunflower oil

- salt, pepper

METHOD:

Defrost and clean the duck. Rub the inside and outside of the duck with oil combined with salt, pepper, and wild garlic. Place the diced potatoes inside the duck and seal with toothpicks. Set aside in the fridge to allow the flavours to circulate. Place in an oven preheated to 150oC (gas mark 2) and bake for approx. 1.5 hours. After this time, increase the temperature to 175 C (gas mark 4) and bake until browned, i.e. for about 20 minutes. Fresh wild garlic leaves are best eaten raw (e.g. use them in a salad), as they lose their healthy features when exposed to heat.
