Grilled poultry kofta/oriental grilled poultry kebab
INGREDIENTS:
- 500 g Cedrob chicken meat
- onion
- 4 cloves of garlic
- 2 tbsp chopped parsley
- ¼ teaspoon of ground coriander
- ¼ teaspoon of ground cumin (romaine cumin)
- ¼ teaspoon of ground allspice
- salt, pepper
METHOD:
Mince the meat together with the onion and garlic using a meat mincer. Grind the coriander seeds and allspice in a grinder or crush them in a mortar. Combine the meat with all the spices and finely chopped parsley, and refrigerate overnight. Pour some water over your hands to make them wet, and form oval-shaped chops and place them on sticks (it is recommended to soak the wooden sticks in water before grilling). Grill them on a tray over a medium-hot grill for approx. 20 minutes. Serve with garlic sauce and, for instance, grilled carrots. Please note: cumin and caraway (in Polish: kumin and kminek) are two different spices!
